Okay - time to bump this thread.

Have removed 2 smallish silver perch and a huge jade from the system tonight. Will purge them for the week and then intend to smoke them next weekend. Will smoke the silvers whole and the jade as fillets (is way too big to do whole).

I'll use my kettle BBQ (Webber).

I purchased 2 different lots of wood pellets from B today (couldn't decide which to use - so got both). Best thing is they stuffed up and only charged me for one (didn't realise till I got home and this may partially make up for all the times I've been charged wrong price for things by those A holes).

Maybe you fine peeps can help me decide which one to use. I got:

1. Hickory; &

2. Savory Herb (Oak Wood, Oregano, Rodemary and Thyme.

I'm figuring the Hickory may be better for fish - the other one may be more for red meats. Though in the end I'll give both a go, just want to decise which to use for my first try.

Have re-read the great post that C1 made in this thread ages back - and will follow those instructions - except in relation to the way the wood is used.

Maybe - but I don't have trout :lol:. What is your opinion for silvers and jades (spose you've not eaten them before - and nor have I, I've just had jade :-/).

I've eaten jade recently and I think I would probably go for #2 as well. But I like a lot of herbs ;)

Axl says, go hickory first, because you know what it tastes like and will give you a good baseline for flavour comparison.
