Man I really drag my feet with my projects haha.

Anyways, finally got around to doing a hangi from scratch. Pretty simple, dig a hole, line it with volcanic rock, burn a bomb fire in it for 3 hours, lower in the food tray and bury. Slow cooked for 4 hours!

Turned out a really fun day for all the fam and I recommend it for something different to do on a weekend. The fire itself payed off early in the day whilst the kids cooked marshmallows and the adults indulged in cold beverages and nibbiles.

Went for a couple of lamb roast cuts, whole garlic, onions, potato, home grown pumpkin, rosemary, salt and pepper to season. All layered with cabbage leaves to produce the steam.

Really great meal.

We did one a few weeks back a key to doing it is as you see steam rise from the covering you need to plug it to keep the heat in but as it looks like what you have put in it might not matter so much but for a pig or lamb or cow that requires a bit longer you dont want your pit cooling down to much before its all ready to come out.
