My wife is having Rollmops for lunch. These are pickled Herring fillets rolled around a savory filling hence the name.
Has anyone tried this with Tilapia?

I have made roll mops from carp and except for the tough skin which is easily removed you wouldn't know it wasn't herring. If the fish are a bit small you can take off the heads and tails and put the while fish in.After a couple of months the bones are dissolved and you can eat it all.
