Planted zucchini for the first time in my system and they've gone crazy and we're picking 6 or more every 3-4 days. Pretty much the same as our cucumbers :funny1:

We have been using the zucchini in stir frys, cooked on the BBQ with garlic/olive oil and steamed.

Does anybody out there have any secret recipes they'd like to share :think:

I make a chilli chutney which uses stewed apples as a base, thinking of replacing the apples with zucchini? or maybe adding it to bulk the chutney up :lol:

We've been feeding heaps to the goats as we can't keep up.

There are quite a few recipes where you use zucchini in cakes.

It makes them quite moist and nice.

Fritters with corn and feta is always good. My local tapas joint also does a grilled zucchini and haloumi warm salad dish which is really nice too.

If you have the freezer room they make good veg filler in most soups just blend and freeze and add to soups in winter.

If you have a mandolin you can make zucchetti,zucchini.(vegan/low carb/paleo/gluten free spag or fettuchine) simple sauce garlic chilli tomato parmesan
Frittatta
Stuffed
Sliced dredged in flour and fried in EVOO

I got a glut of eggplants at the moment
tomorrow is eggplant falafel
middle eastern spices onion parsley and Im adding pigeon peas cause I have heaps of those too.
Theyre delicious
You could do them with zucchini too
Just drain some of the liquid first.

Cheers Snags the soup thing is a good idea. Didn't think to freeze them them for Ron. Had to google what a mandolin was :think:

Added diced zucchini to spaghetti bog last night. Bacon and eggs for breakfast with a couple of slices of zucchini loaded with chilli :lol:

Luckily we're having our family Christmas do this weekendand so I can send heaps home with people.
