A Nomenclature is important , I think.

I found this totally interesting and worth while bunch of pages that tell you lots of stuff about key temperatures in cooking.

That's why it's called "key temperatures in cooking".

Which is nice.

Since I recently spent a few minutes as a syrup waffle making woman in place of being my regular, non-syrup waffle making man self, I feel it's within the new bounds of my psyche to invite even "non-women" to the following excellent web site. There are a dozen long pages on everything from fish protein temperatures to chocolate.

One of the few things I bookmark and think I might actually go back to. Most of my bookmarks are bookmarked so I don't need to read them. Which is interestingly how I came to stop watching TV. I bought a hard drive TV recorder thing, recorded everything I wanted to see, and knowing I didnt need to watch it because it was being recorded, never watched it.

As far as I know it's still recording everything for me.

Which is also nice.

As a chef, I go by temps of food far more often than by touch or feel. Depending on what I'm cooking.

Far easier and more accurate that way.

Chinook as in the salmon, or the double rotor helicopter that is named after it? If it is the helicopter, don't worry, hearing them is normal, they are quite loud. If it is the salmon, I would be concerned.

If they can here your thoughts it will help to locate you quicker. I have asked that they have brandy snaps on hand when they land to collect you. I trust that helps.

What probe do you use/recomend?

I'm looking at one by thermoworks. I've been doing lots of slow cooking so it would be one that I can leave the probe in the oven, and that has min/max temp alarms.

There are a lot of good things said about their $100+ instant read probes, but I'm wanting something I can leave in the oven.

Probably this model if they will sell it to me with the oven probe rather than the one it normally packs with...

IKEA sells a stay in thermometer / timer for less than $10. It does the job...

I went to the etymology site. I looked up instant. It gave a number of words related too. Commando was one of them. I think because at the very end the term going commando was covered, meaning ready for instant action. That made me happy.
