Anything in the Alliums (onions etc) grows like gangbusters. I've done pretty well with beets and I know others have done well with carrots. Just make sure you clean them up before eating - same as with a dirt garden.

People have done it. Personally, I would build a wicking bed for root vegetables. They are far less maintenance, and root vegetables like their soil.

Spring onions and beetroots grow very well for me in a river gravel + clay balls mix, carrots not so well- I'll wait until I have some wicking beds before trying them again. I have some Yacons (earth apples) in ATM and they are certainly growing very well on the top half, but I have not yet harvested any to see how the tubers look.

I'm trying sweet potatos, so far they have been very resilient and growing well, in fact probably my best performing plant.
