The last time I looked, it was about $55 a tonne at the local sand and metal depot

In keeping with the touch of marble it would of course be compulsory to have your standpipes carved as columns with lions heads....

and your siphon returns as statues of archers standing on one leg or water bearing maidens ..... :D

You could try TTI stone. they make paver and stuff. Some of the that stuff is out of marble. Might even be a waste product.

I got the marble floor for my pizza oven out of a skip that came from there.

What are the effects of marble on pH/hardness. I have always heard that it is used to lower pH, below what bicarb can. I might be wrong, or it could just be a good pH buffer...

it should have the exact effect that sea shells, shell grit or calcium carbonate powder do.

Yeah, sorry. I always look at it like a scale with one at the top (acid) and 14 at the bottom (bases). I should start saying it right.
