just because "the water is clear" doesn't mean the filtration is "good enough"..
are you testing your water - ph, ammonia, nitrites and nitrates?
you can't see these things in the water to judge water quality... high ammonia and/or nitrites can kill your fish - or stress them so much that they get sick.. just an fyi

That's a pretty good creative and somewhat cheap DIY design. However I definitely think 100 fish is way overstocked!

Currently the Monthly tours are on the first Sunday of the Month at 10 am though that could change if I start doing any Sunday Markets.
I can also do special tours by appointment but I've found I need to start charging for those or I wind up with people spending all day here pumping me for information and I can't get any of my work done (FYI with a new farm, there is always tons of work to do and no money to pay anyone else to do it or time to train them even if there were the money.)

As to putting a rig on a trailer. Here are some things to keep in mind.
1-you need some way to keep wind from beating up your plants as you drive the trailer from place to place. (Just a tarp probably won't last long if you are making any trips at more than 40 mph.
2-Water is heavy the trailer will need to be able to handle the weight of the water plus containers plus gravel plus plants and support structure as well as whatever cover you use to keep the wind from beating up the plants.
3-Water sloshes so you either need a fish tank container with really high sides and not that much water in it (which might make the whole set up rather tall and unstable.) or you need a container that you can seal shut with a water tight lid for transport and then open it back up once you get there before turning everything back on.

People I know who have taken AP produce to market have tried to take a small demo system to set up at market but discovered that goldfish don't handle being moved to new tanks twice a day very well and rarely survived long. I don't know how much that would translate to a system permanently set up on a trailer but I would recommend a pretty durable fish for the system since travel may be too stressful for sensitive high value fish. I have kept a demo system before that was small enough for me to keep the fish in the tank for transport and I had mosquito fish in it. They survived several trips for talks and demos and even survived spending the night with their fish tank in the cooler in the trunk of my car before but then again, Mosquito fish can survive inch deep mud puddles through hot and cold weather so I don't think they are a good indication of what other fish might survive.
