I'm going to be honest - I'm a bit timid when it comes to killing them.

Whacking them over the head with the back of the knife and then just slicing the head off seems the neatest and least icky way of killing them. There's no way I'm sticking my fingers in it's gills and snapping its neck.

Are there any other ways that I should consider?

Insert the point of a sharp, sturdy knife blade, cutting edge facing forwards, into the centreline of the head about 2-3cm behind the eyes and in one movement force the knife down and tilt it forward towards the front of the head until level with the eyes. The fish's body and tail will spasm for a split second then the fish will go limp... Brown bread!... it takes a poofteenth of a second.

Once you've done that roll the fish onto it's back and slice through the fleshy bit at the bottom, just behind where the gills join on the fish's underside, slice through to the gills, if you get it right you'll see squirts of blood coming out with each beat of the fish's heart, then gill and gut, remembering to remove the kidneys (the black bit along the backbone on the upperside of the gut cavity)... this'll provide the freshest, least stressed, tastiest fish.

If you are going top 'throw them in something' then a suitable alternative to Mr Damage's iki jime method described above is for that something to be a bucket containing an ice slurry. Ideally, the fish would be stunned or brain-spiked before going into the slurry but, if slaughtering the fish really bothers you, then the ice slurry should be sufficient on its own to induce a fairly quick brain death.

For more detail check this out: good info

Gotta say - thanks for the advice. I pulled 5 Trout out this arvo and knocked them off really quickly and I hope for them (relatively) painlessly.

They're good eatin'.

Last nights catch, I have decided to start pulling a dozen or so out each night when I feed so I don't end up having to do them all at once, size varies as they are from two batches one mid May the other late July

Smallest in photo was 290g and largest 635g

We culled these last night as our tanks are hovering around 22degrees.
We still have about 5 left in the tank, so they will be culled in a day or so.
