Simply stuffed the cavity with finely shredded fennel and spring onion which had been lightly sautéed, then pan fried in EVOO and butter, with a few cumin seeds a little fenugreek to keep the aniseed flavours going. Delicious fish, subtle flavours.

Might have been something to do with the size? But the rib bones seemed to come away from the backbone too easily, so I had to pick some bones, instead of like with smaller specimens when all the bones pretty much remain attached to the carcass?

Still, it was a massive feed for one, washed down with a Monteith's black beer... nice after a long day at work and then renovations at home.

Cheers PLJ. I actually bunged them straight into the oven like that filled with rainbow chard in the gut for 18 mins but that was a few mins too long. I picked them up with an egg slice and tongs to keep them intact

Ahhh whoops. Have been running my pump 24/7 due to dirty water and switched it off yesterday before going to work as the water is looking good. Unfortunately the water got to 20+ degrees and I came home to this 5 hours later. Some of them were in the last throws of life and some had already gone into rigor mortis but I'm sure were only dead an hour or so and the eyes were nice and clear so straight into the freezer for a future meal.
At least I'm now convinced it's time to get that AC/DC aerator for added insurance.

Hi Jackfrost, it's a shame to have lost your trout. I guess all is not lost, at least you still get to chew on them. Back up air is a must in my opinion. Imagine keeping Silver Perch for 18 months and stumbling at the finish line due to something like that, You'd cry.

Not sure if you guys have tried buying gear from Boyu Australia, I use them for most of my gear. Great prices and fixed freight of $9 for any weight

Nah I've got at least 3 big ones left so I'll keep them ticking along until the temps get to Barra levels

I had a jumper the other day, not quite as big but just as broad in the shoulders. I didn't weigh it and didn't photograph the poor soul, just laid it to rest under an in-dirt tomato plant.

Well i was busy adding some Gilgie tanks above my sump today and I kept looking at the Trout tank, should I or I shouldn't I :shifty: :shifty: :shifty: , was the thoughts for most of the day until I cracked my first beer this arvo and then the decision was made.

Well 7 Trout later, I actually thought there was 8 and was blaming the dogs for a while until I checked my photo's. Any ways, there butterflied in the fridge seasoned with salt, brown sugar, chilies, garlic, spring onions, black pepper and lemon pepper. Ready for smoking
