I've only caught 1 carp to 40 redfin in the last 2 years. It depends on where you are fishing and what your fishing with.

I grew up overseas(europe) and our traditional christmas dish was carp. My grandfather used to catch them and leave them in the bathtub for 2-3 days... I used to play with them.

I don't believe this was specifically to purge them but more a convenience thing so he didn't have to go and hope he caught something the day before or the day of the holiday.

You could also buy them in town, mainly live.

We cooked them fried like a schnitzel, cut perpendicular to the body so they were shaped like a horse shoe. Annoyingly bony but the flesh was pretty clean, white and flaky.

I'd happily eat them and hungarians make one hell of a stew/soup from pretty much every bit including the roe(sp?)

I think they're currently a very wasted resource because of the reputation they have. They could be a dirt cheap source of protein for a lot of people who can't afford it.
