I have another hot tip

When you are putting something like a chicken in a freezer bag, or perhaps more often fish, a useful thing to do if you don't have a vacuum sealer sucker device to take all the air out of the bag is to put your whole chicken in a plastic bag, then lower the entire thing into a sink full of water. The water presses all the air out of the bag, and you get left with a close approximation of a vacuum sealed product and all the extra freezer life that comes with it.

Does that make sense...

Put what you want into a freezer bag, push it under water - except the top opening bit - then seal up the top bit while the thing is still under water. Then when you pull the thing out of the water, the plastic will be hugging the product perfectly after expelling all the air.

Well this recipe for "Chicken Caesar Salad" has been inspired by one of the rooster that we bred last year. Upon realising that we had 4 such birds, that would never lay eggs they became destined for the dinner table. Processed at Prestige Poultry in Wangara for $2-70 a bird, we thought that was a good deal. The largest one weighed in at 2.84 kg and the smallest was over 2kg. At six months of age they are probably not going to be the most tender and the one shown was first roasted before having the white flesh pulled away from the bone. The pictures will tell the story of how this dish went together. From the backyard of BYAP grown chicken, to the aquaponic salad and homegrown eggs it made for a tasty lunch, layered with pamesan cheese, bacon and some parsley.(Brad is still with us for those wondering)

Charlie, doesn't your company have a simple IBC set up outside so that the staff can pick some salad to add to their sandwiches, keeping them happy and healthy

And this one is mine.

You can make super crunchy, fat free croutons in a few minutes from fresh bred in a microwave.

just take a couple of slices of white bred, and lean them against each other in the centre of the microwave so they stand up with each others support.

Then set the microwave to it's lowest setting and go.

If your low is a little high, you might have to stop it every now and again for a few seconds to let the bread cool so it doesn't burn.

Cut or break to size and add to your salad. They stay crunchy in salad dressing for ages, and add an excellent texture.

I cut the crusts off. I dont know why.

No butter, no garlic, no toast taste

I'm all about the texture
