Just ordered in a couple of bottles of Cane Royale from the hoochery in Kununurra. Its a chocolate, coffee, rum liqueur, possibly the tastiest substance on earth, but a bit pricey (around $55 a bottle). Fantastic neat, on ice or even on icecream. :notworthy:

I drink mead. Commercial stuff is swill. Home brew all the way.

Ginger beer is great, Malted GB is good too once you get used to it. very beery, but thats not always a negative.

Someone out here on the West Coast must not know that.

You can start a small operation legally with permits and such but bond amounts are high. We where going to apply for one after getting our (alleged) product written about in well known whiskey mag but could never get the 500k together to get going right. Half was just a bond and we where going to use a distillery already up and running to make product in. Due to our process being far different then the process at the place already we needed a separate bond. I just still find it unfair that someone can't have a little personal still for family/friends without committing a felony. I know they repealed the home brewing laws years ago for beer and wine but need to so a little something for the people that like a cleaner spirit.

There are a few little places that are making mash and distilling on site around here but they are pet projects are major bar or club owners directed at the hipster market.

Sorry to hear about your plight pancakes. Kind of makes you wonder where the regulators expect that next distiller to learn his craft?! They don't want to be seen as a roadblock but they don't want to be seen as a promoter so they make the price of entry high. I suspect the explosion hazzards probably kept regulations from being reduced while for beer and wine this wouldn't be as much of an issue. Seems to me that some sort of co-op or community distillery could be written out of the law to allow individuals to safely brew their own with some public control in place.

The co-op thing has been used for home brewing with great success but with distilling you hit the roadblock of large bonds once again. The brew co-ops work well with people pitching in on large brewing gear and a membership that helps cover the rent and power. The grains get ordered in bulk with people sharing the price up front or paying a bit more later in some of them and lots of stores start out as a co-op I heard. The distilling can't really be done like that as the home brewing act signed by carter inn 79 allowed the brewing of beer but distilled spirits are still in the dark ages where if any is produced at a house even a shot its a crime as a bond to cover potential taxes is not paid and if you even want to pay the wee bit of tax on a liter the bond is full price then you can pay the wee bit of tax. Funny thing is I have only been drunk 4-5 times just like to brew. I don't even like the taste but can tell good product by smell.Family heritage needs to keep alive.

Just waiting for the temperature to drop a little before kicking off the home brew again, most yeast varieties die around 30`

Last time I read the rules :D Aussies could have a still but the requirements are nothing over 5 Liters and its for making aromatic oils and the like only :think: going by this I started making a very special blend of Throat oil and gizzard lubricant :roll:
