Once your nitrites start to drop you say that your nitrates are happening..

If you had the graph of the cycle you get this..

1 - Ammonia Spikes then begins to drop..
2 - Nitrate appear and will spike then slowly drop..
3 - During the nitrite spiking small numbers of nitrate will appear until the nitrites are gone and all you have is nitrates.. In a pure fish system with no AP they will just continue to rise..

There a graphic chart showing the cycle out there somewhere and I can't find it..
- the cycle is going to take a few weeks dependant on temperature.. the colder it is the longer the cycle..
