Figured I'd share a recipe I tried on some rainbow trout.
Thanks to the BYAP crew for the trout!! Special thanks to Peter who gutted and scaled them!! XD

TROUT WITH RED WINE SAUCE

4 trout, cleaned and gutted
salt and pepper
four Tbls water
half a dozen peppercorns

Sauce
50g butter
1 small onion (chopped)
1/2 carrot (grated)
decent cup of red wine
couple of sprigs of fresh thyme
3 tsp plain flour
1 Tbls fresh parsley, chopped
(optional) 1/4 tsp of anchovy essence

1. Preheat oven 180C
2. Season (clean) trout with pepper and salt. Grease oven safe dish and lay trout in with the water and peppercorns.
3. Cover trout in a sheet of buttered greaseproof paper. Bake in oven for approx 20 mins, or until fish flakes easily when tested.
4. Remove. Strain and reserve liquid. Keep trout warm on a serving plate.
SAUCE
1. Melt 3 tsp of butter in a pan and saute onion and carrot. Add wine and simmer until it has reduced by half. Add the reserved liquid and thyme. Simmer for a further 5 minutes.
2. Combine 1 Tbls of butter with the flour and add in small pieces. Simmer until the sauce thickens. Add anchovy essence, remaining butter and the parsley. Taste and adjust seasoning if necessary.

This recipe is absolutely devine and would work well with lamb ( use lamb juices instead of fish - remove anchovy essence) or any type of fish.

This one is really simple (but a bit fiddly to prepare), but you need big Yabbies, and is not the healthiest choice.

Get Yabbies (asleep after putting in freezer).
Cut in half length ways.
Clean out guts / head.
Make a garlic butter breadcrumb with fresh bread (add in herbs of choice, I like finely chopped rosmery or thyme for eg).
Put moist breadcrumb mixture over flesh and in head cavity.
Place under grill till browned and crispy on top.

As flesh cooks it will come away from shell slightly, so should be easy to remove with a fork. I recommend a dry crisp white as a 'garnish'.

Fish Pie goes ok
cook the fish in milk(3/4 done)
Sweat some leeks in butter
put everything in a shallow pan
add veggies of choice Broccoli,carrots peas beans,corn( either microwave fresh ones or use frozen)
make a bechamel sauce with the milk you cooked the fish in(flour butter milk nutmeg salt pepper)
Pour over
cover in mash potato put some cheese(parmessan /tasty anything you like) on top and cook in the oven till the top browns.

Though I'd share a pate recipie..

4 tilapia gutted and head removed.
Cut out the backbone.
Leeks/onions to taste
Sea Salt
Peppers if desired

Cook in crock pot overnight under water with 2 oz of apple cider vinegar.

In morning add enough rice to be just about 25% of the water volume. Let rice cook until all the water absorbed then add soy sauce, salt, pepper, garlic, and any desired spices. Mix.

Serve on bread or as patty. They patties can be breaded and fried as well!

The vinegar dissolves the calcium out of the bones and the bones are soft enough to eat.

This reminds me of salmon patties. I guess its the method of preparation to consider here more than the specific spices. I find that adding spice right at the end of preparation gives the best flavor.

She altered the recipe a little by adding olives. We had a hard time finding "Capsicum Paste" - but we found a suitable substitute with "Capsicum Eggplant Pasta Sauce".

I must confess that I do NOT enjoy eating fish - BUT when there are many other tasty flavours - I really ate this meal with enthusiasm!

Yabbies.

Steam them using lemonade instead of water. Salt lightly when shelled.

Charlie, Why do you use lemonade to steam your yabbies? or did you run out of port and so need a new use for the lemonade?

Gotta find some yabbies first I am getting to the swamps two weeks late and the pickings are thin.

Why bother if you're refering to MARRON mantis. Marron season has started here but we wont bother with taking on the 'riff raff' I think we should grow some instead!

No marron over here, just yabbies and growing them is really not an option as they kill each other. We have many swamps and lakes that have filled in the last year or two and the yabbies are starting to come up. Just got to find them at the right time
