Ginger beer set and happily bubbling away. So five weeks and we will have a nice batch ready to drink! Should come in at around 5%

What temp is the ginger beer yeast good to badger? A lot of beer yeasts die around the 30 degree mark, although the wheat yeast variety is a bit more tolerant. Looking at the forcast its not too hot this week so i might put down another 'spider style' batch for good luck, just in case we get through the 100 or so litres we have left before things cool down enough to start brewing safely again.

They are good to 35'c, any higher and they usually croak I have found. We made some cider earlier this year but it turned out super dry even with some fructose in it which was a shame. Will just have to stick to the ginger beers I think.

hmmm thats fairly achievable, i might have to stick a GB on too in case i run out of lagers and ales. Do you use the GB kits or do you have your own recipe? Where do you get your brew supplies? I notice Brewcraft now have a shop on north lake rd.

I get the kit from big w (tall tin not the short one cant remeber the name) and I add 500g of fructose and about 2 cm of fresh chopped up ginger and dextrose to the required alchol percentage. Careful with the ginger as I added to much once and it was pretty strong. Added 2 kg of dextrose this time, one of which was a brew enhancer to see how it goes. I went to that bwcraft and they have allot of stuff. Will probably get the yeast from there next time. Got a bottle sanitizer from there as they were 30% off.

I have my kit in the house rather than the shed so its a pretty constant temperature...
