Kale chips, (actually you can do it with almost any edible leaf but the heavy duty ones make the most substantial chips.)

Take some leaves, bring em in wash em off and rip out the biggest veins and rip into chip size pieces. shake in a bag or covered container with some olive oil. Spread on dehydrator sheet or baking sheet. Sprinkle with salt or whatever you like. Dehydrate or bake on low till crispy.

When you first try them you may not know what to think of them but my experience is people have trouble stopping and just keep eating them. I figure they are good for you so long as you don't overdo the salt or use an unhealthy oil.

Works really well with collards and I have done it with swiss chard but they came out translucent. I've been told you can do this with okra leaves also.

I had some at TC's house, they are "interesting". Not bad but a bold flavor that could become addicting, especially when considering all the vitamins and good stuff you get when eating them.

A new way to eat greens. Don't have a dehydrator, so might try the oven method. Getting time to find leafy greens at the farmers market. Hope there is something there I can try.

We seem to keep hyjacking this thread.

That sounds fantastic TCL... have a dehydrator I havent used yet that I found at a garage sale that I had grand plans for once we finally grew some tomatoes, apples or stonefruit, so think I am going to HAVE to try it out now... any chance of getting addicted to something healthy is too good an opportunity to pass up! Cheers :D

Haven't used your dehydrator yet and you grow citrus? Have you never dehydrated sliced tangerines?????? WOW They make a great snack too though most of ours are juiced along with the grapefruit and fill up the freezer for much of the year.

I know... terrible isnt it :oops:

I tend to get too caught up in packing season to do anything creative, and I think it might be a bit to do with the fact that I HATE dried citrus peel in anything... I dont think Ive even tasted dried oranges dipped in chocolate because of it. And considering I LOVE choc-orange ANYTHING its always seemed weird, even to me!

I know I should look at it at some stage... expecially if we are getting a roadside stall up and going (value adding and all that), but just havent been game (maybe insert 'interested') enough to try up till now.

How do you do yours if you dont mind me asking? Any special preparation at all? Do you eat the peel or cut it off?

Im willing to give it a go TCL, really I am... :shifty:

One thing I need help with... we have lettuce in - red and green oakleaf mix I think it is... and it is REALLY bitter... wondering if we put it in too early perhaps? When we put it in last, it was perfect, so not sure whats happening. On the bright side, celery is BEAUTIFUL to eat... so not all bad!
