Anyone ever tried pickling yabbies? I reckon I will with white vinegar and some other things like peppers etc.

I'll do some tomorrow and bring a jar of them for you to try Saturday. We are going back again on Sunday so will probably get another haul. This lake has been amazing over the last few years and massive amounts of yabbies have been caught. All the swamps and lakes around here are full and its only a matter of time before they go off with yabbies as well.

Yep, I use the same recipe as the beetroot I pickle except a tad more sugar, they come out real nice...

OK...found it, this is for beetroot (4 large ones) but works good with most things inc Yabbies

3/4 cup water
1 1/2 cup white vinegar ( I prefer malt)
3/4 cup sugar
1/2 tea spoon peppercorns
1 bay leaf
2 cloves
1/2 tea spoon mustard seeds
1/2 cinnamon stick
1/4 tea spoon salt ( or to taste )

Boil the yabbies until they just turn orange and start floating, get them out and under cool water, then shell them.
Place them and the ingredients into a pot and bring to boil, then simmer it for 5 min.
Strain then place them in jars and fill with the left over vinegar.
Seal the jars and let them cool naturally in the pantry etc.

OMG... I am drooling right now... have been saying for the last 6 months that as soon as we get our hands on enough yabbies that hubby is sick of them and will let me pickle some I am in there

Had a mate when I was younger whose mum used to pickle them in half vinegar/ half spring water...simple and tasted beautiful. The vinegar wasnt overpowering - like a bit of lemon juice on them but no other flavours to detract from the yabby flavour...yum! Stored in fridge but not sure how long they would last as they were always eaten before they turned. Thinking a couple of weeks?

Was in a band a few years back with a big kiwi bass player. Used to play gigs with free accom. and meal - one night was seafood buffet night with yabbies as the star attraction... turned everyone else off their free feed... had about 2 kilos piled on his plate...sucked out heads, reckoned eyes were a delicacy, and ate tails with shells on...not much left on his plate by the end... yuck! ...oh, and definitely didnt waste the claw meat

I wonder if our crawfish could be pickled too? How is it done, boil then pickle?

Paula Dean had a recipe for pickled shrimp on foodnetwork...I tried it once, but thought there was way to much vinigar. I'm sure there are other recipes that could be adapted to crawfish.

Up above someone mentioned not taking away from the yabbie flavor...I have never found american crawfish to have much flavor at all....hence the tons of seasoning in the boil pot. I'm sure most american would agree as they are considered pretty far from fine dining. That could also be because of the amount of work you have to put into eating them.

Think the ones down under could really taste that much different?

Thats how I do it....the first boil is to basically kill them and get most of the crap out, all that floaty scummy stuff that rises to the top when boiled.

I have caught them in the North Georgia mountains and here in Perth they tasted about the same but the water in both places was pretty clean, Not sure how the Mississippi river is these days.

Well if they had no taste at all like your crawfish, we wouldnt be going out and getting sunburnt to catch them. Folks go crazy over them down here. I know one bloke that gets what every guy wants from the wife if he catches here a feed of yabbies
