I have never tried it, but it seems if you slice and salt the eggplant pretty heavy to remove water, then it might freeze OK. I use the salt trick on eggplant before batter and fry and it works a treat to remove the water. What would work for sure is to make an egg plant lasagna. I'm sure that would freeze well as I have bought them at the store before.

Not on me - but gimme a day or so - thought I'd have one on the chilli site, but sometimes it's amazing how wrong I can be :shock:

Mine definitely produce more flowers than fruit... just as well... :lol:

I brush mine with an old toothbrush... in fact I brush everything... :wink:
