I have never tried it, but it seems if you slice and salt the eggplant pretty heavy to remove water, then it might freeze OK. I use the salt trick on eggplant before batter and fry and it works a treat to remove the water. What would work for sure is to make an egg plant lasagna. I'm sure that would freeze well as I have bought them at the store before.

I brush mine with an old toothbrush... in fact I brush everything... :wink:
