My artichokes (non-AP) are comming on with a rush and I have no idea what to do with them but know I like marinated artichoke bought from Italian stores. Does anyone have a good recipe they would share? Having never grown or cooked them before I need it to be really well explained.

I recall our steamed or sauted artichokes were very nice (also from dirt garden) but I'm not the cook so don't really have good instructions about how to do it. I'm thinking it is actually simpler than some make it seem though. Good Luck in your search for instructions.

Stuffed Artichokes:
I just grabbed the recipie from an online site but I love them this way!
Ingredients
6 whole artichokes 3 slices Italian bread, cubed 1 clove garlic, minced 1/8 cup chopped fresh parsley 1/4 cup grated Romano cheese 1/2 teaspoon dried oregano 5 tablespoons vegetable oil, divided salt and pepper to taste
Directions
Snip the pointed tips of artichoke leaves, and cut off the stems. Wash and drain. Holding artichoke firmly by base, firmly rap the top of it on a hard surface; this will open it so it can be stuffed.
In a medium bowl combine bread cubes, garlic, parsley, Romano cheese, oregano, 2 tablespoons vegetable oil, salt and pepper; mix well.
Press about 1/2 cup of stuffing into each artichoke. Tightly pack stuffed artichokes together in a large heavy saucepan or Dutch oven. Add enough water to reach half way up artichokes and add 3 tablespoons oil.
Bring to a boil over high heat; reduce heat to low and simmer, covered, for 1 hour, or until leaves pull out easily.

You just rake the stuffing and soft part of the pedals off across your teeth and throw the fiberous part away

My wife LOVES steamed artichoke, with a sauce she makes (recipe of Chilean decent) however I can only eat them marinated... I can't stand them plain, bleurgh!

I have Artichoke in my AP (they do really well but take up heaps of space). We boiled them - they're really quite fiddly to eat as all the leaves that you don't cut off have only the bit at the base which is soft and tasty (but very tasty!). The hearts are great though. I reckon they're a great "finger food".

I like the plant, but am too lazy to cook them. So give them away. Tried a jar of them once and didn't like them. But fresh would be a lot better.

I watched a heap of Youtube vids on how to prepare the hearts last night, seems easy enough, just need to find a marinating recipe that is more interesting than just white wine vinegar and olive oil.

Oil & vinegar is said to be great.
There's a great new multinational company that's just opened a shop near me. But in Aust they only have 3 shops atm and all are in melbourne.
The place is called Oil & Vinegar
it has an online shop.
It's not the cheapest, but has thousands of different oils and vinegars, so that would change a simple marinade drastically.

Just an idea... I don't know what their shipping is like.
