I think most of the increase in our life expectancy has come from better sanitation and vaccines. We haven't been so good with chronic diseases.

And as far as changes that have taken place with the increased use of fertilizers: how about the huge increase in meat eating and buying prepared food, huge decrease in cooking and veggie eating, and the invention of "'edible foodlike substances". Not to mention the increase in nitrates in our drinking water (as Angie pointed out)(ours is 10ppm).

Go with AP, eat lots of veggies and some fish, spend lots of time messing with your system and cooking, and that will probably be a big health plus, especially for the chronic diseases.

If your worried you can always pull out the plant when its ready and sit the roots into fresh water for a few days to clear any nitrates from its system. Not going to work for tomatoes.
