lez how do you go about smoking fish sounds interesting

I had fresh water fish for the first time the other day they were very bland the lady that prepard them told me all fresh water fish need extra seasoning i wonder if smoked fish have a better flavour

With the smoked fish thing - Landline had an article on a Tasmanina trout farm who smoked them, got a govt grant too (that's for u Steve).

I only saw the last bit of it but he pulled out a butane torch to fire up the smoke oven. With his system extracted water from a river/marsh land and stated that it goes back cleaner than he received it

Um technically BF, you are not allowed to "interfere" with native wildlife in any way. This includes moving roadkill from the middle of the road to the side to remove a traffic hazard. If you get caught there are fines etc from EPA (?) for interfering with native life.
So, yes, this means if you accidentally hit a wallaby, stop your car to check on the animal, find it mangled but still alive, and decide to administer last rites, you can be fined. Even though it is cruel to leave the animal suffering.

Easiest way to make a smoker is using a metal container ie a galv tool box or similar with a lid, new metal trash cans are popular. Mount one or two wire racks (up to you) inside, for the fish fillets or whole fish to sit on. Get some NON TREATED wood saw dust, like pine or oak. You can buy flavoured sawdust as well from speciallty shops, spread a layer on the bottom of the smoker. Get a small metholate spirits burner or similar, and place it underneath the metal container, so it heats the saw dust indirectly. Make a wind guard out of a piece of metal to contain the flame. It will take a bit of trial and error for your smoker, just check on it every 10 mins or so, untill you get it right.
