Found these fish smoker bags on the big E, anyone here tried them, I suppose for the price I will give them a go, or is sawdust in a weber the most ideal

well doesn't look like it, so looks like I am going to be the pioneer in AP for smoker bags

I've tried the steamer bags. The smoker look like a foil bag. Might give you an idea if you like fish smoked.

yeh they are foil duff but have the sawdust in them as well, just add fish and heat

I've tried one of these. Different brand but looks like exactly the same gig.

I did chicken legs (drumsticks) in mine and yeah, they were OK. It's only a light smoke flavour, but OK.

If you're after a stronger flavour, or want to smoke a decent amount, you'll need to go back to the webber.

It depends what flavour you're after. I make my own bacon and like a strong smoke flavour so don't think I'll be using the bags again anytime soon.

well will save my $4 then CD and the webber it is, what do you use, mate has a saw mill and can get almost anything, native anyhow

The only two natives I've tried to date is wandoo and jarrah. The wandoo was quite a good flavour. The jarrah was as well but you need to be fairly tight-arsed with it, i.e. don't use too much.
The first time I used jarrah I was pretty heavy handed and the end result was a pork shoulder that tasted like I rubbed it with jarrah resin - bitter ! Using much less the next time produced an acceptable flavour that was OK but not great.

I've got some ironbark chunks stacked away that I'm yet to try. Unfortunately my barrel (texas) smoker is packed away due to large renovations that are STILL going on at my place. Will start a smoke thread when I get around to trying it.

Most of the time I still use mesquite and hickory from the bags you can buy at any of the BBQ stores. Soak them in water for an hour and throw 2-3 pieces on the heat beads in the weber, do this 2-3 times, and you're on your way.

I'm still waiting to find someone who has an apple tree that they want to cut down so that I can get my hands on that as it's supposed to be ideal for fish due to it's lighter flavour.

Ahh yes, I was going to suggest apple. My apple tree is awaiting my smoker, then I will cut it down.
You can get good prunings every year from a well growing tree. perhaps you should plant one.

The main concern I've had is that fruit fly are prevalent in WA and I have an existing orchard (15 trees, mainly citrus) that I don't want to attract the fruit fly into. My understanding is that they're not particularly attracted to citrus but will infest if they're nearby. I don't want to spray as the AP system, once I finally get it up, will not be far away.

Also, I don't think I'm that patient !

well will get some Jarrah, Marri, and Sheoak and try them all, just out of interest, I have heaps of dried chilli's would they work in a smoker

What about contacing an apple grower and asking for some prunings (too late for this year), but may be ok next year. They either just mulch them up or burn them off depending on their needs.

Hmmm there's a big cherry orchard near dad that may be amenable to giving prunings... what does cherry smoke like?

Those dried chillies - did you want to use them as a source of smoke or did you want to impart a smoke flavour to the chillies ?

Good thinking. There are apple growers a couple of hours south of Perth. In fact, now that you've got the juices flowin' there are also pear and cherry growers. Very cool - I'll get my shit together next autumn and call a few of 'em.

Nigel was wondering about using them for smoke, and will give the she oak a go first, maybe a month away
