Hard to see by the photo but its in the order, Nitrate, 1st Ammonia, 2nd Ammonia then nitrite. Readings are Na 5 Am .25 Am 0 Ni almost .25. Same system. But the 2nd Am reading is after it leaves the 380ltr tank with 400ish fingerlings in it.

Sorry you were to fast. Water is coming out of the pool through a gb and 2 tanks with 400 ish fish but comes out with less Am than what went into it. I checked the Ni and it also leaves the tank at zero.

Lots of aeration in the tank with 400 fish? Bubbling removes ammonia.....

So the water flows from pool, through GB, into FT, and back into pool? (Sorry I haven't read all 30+ pages of your system.) And the first test water is taken as it runs into the FT while the second is taken out of the FT? :?

This is really weird....unless you have most of your bacteria coating the walls of your FT (very unlikely) or have a lot of plants or algae in there as those would soak up a lot of nutes...

At first I thought you must have those samples backwards....

Round the 14cm mark feed at least twice a day. The gb is clean and I don't have many plants in that one coz I'm lazy. I think the yabbies are the cause of the extra Am in the water. 150 of mouth size yabbies in a pool with silvers at the 40cm+ size. I know George polished off most of the 20 ish that went in with him. No funky smells, water or gb media.

Gave the pool a sweep looking for yabbies and found zero. Theres probably some hiding with the mussels but the rest are gone. The silvers look happy but don't seem to be that hungry. Bottom is dark but clean. The gb's inlets have mesh so they are all clean also.

Looks like you are doing well with the polyculture thing.

Are the mussels in the tank with the 400ish fishes or the pool?
