mangos never last long enough to get ripe here. a little salt, vinegar, cumin, and hot sauce. Put teh green mango through to potato peeler and sak in the vinegar solution and the kids eat it up.

Got any equipment that generates some heat. Old pie warmers make good dehydrators and if you have a heat source you can hook one up to utilize it.

Hi Jaymie, your ezidridehydrator looks very similar to the vacola we have.
I found that when drying apples and they are dried to be 'al dente' (nice & chewy) and packed in airtight jar, they will keep for about 3month at room temp., so I keep the jars in the fridge now.
I reckon the only way to keep them at room temp.(in jars) is to dry them crisp (e.g. no moisture).
How do you keep them....how dry do you make them?

:oops: I'm hardly an expert :oops:

Like I said, we've only had it for a year. I've dried apples, pineapple, mango, mint, capsicum, onion, garlic, mushroom, eggplant, carrot, zucchini, soups ;)

Most of the stuff is stored in glass jars in the pantry. Last year the mango went into ziplock bags, as there 8 kgs of it ;)
