elephant garlic is apparently a different species to normal garlic. it is closely related to leeks.
there is more info from greenharvest, but I don't have time to type it up just now

OK .... Jaymie ....... I was just curious - - was hoping you could grow it in AP all year.
Garlick will not grow (in the soil) during our summer here - - I tried.

What did you plant .... Elephant or just normal garlick?
Will be interesting to see if it germinates/grows :D

umm, I planted it in April? I haven't harvested it yet. Apparently it flowers every second year, and I was waiting for it to do the other garlic thing and die back. It's still growing 8)

Just run of the mill garlic from the supermarket. It should germinate okay I've grown it before just forgot to water it. :mrgreen: Planted a bag of 8ish in a protected part of the garden.

Ran out of pickled garlic. :cry: Decided to try fresh garlic :shock: :puke:Needs to be pickled. Nice after taste and the reaction from the other half was worth the effort. :twisted:

Elephant garlic is not true garlic. It is actually a mild garlic flavored Leek. Raised in much the same way (other than the die back thing apparently) and can be prepared much like garlic or used like Leeks. I believe in the right climate, elephant garlic can be a perennial.

Elephant garlic is definitley more perishable than ordinary garlic when storing..... discovered to my dismay. But a super plant to grow.

Pickled 500g of garlic today. Same amount as I planted in the garden. Added a cup of vinegar a tbs of salt, some cloves and Oregano. Got another bag of garlic to try in a weeks time. If the first batch works.

All was going well with the garlic. It even started to taste good pickled. Then the garlic started to turn blue. I like blue as a color but think I might have stuffed up there somewhere. :brilsmurf:

I'm not very knowledgable on the preserving front, but do know that garlic can kill you if not treated properly. Mind you, this should not be a problem if sufficient acidity present, which you seem to have with the vinegar.
