I didn't see anything on here about Tench, which is often farmed in ponds here in Germany.

Tench (Tinca tinca) is a cold water fish found in still, muddy waters throughout Europe and Asia. It can live in fresh and brackish water and normally grows to a size of 20 to 30 cm, but they can get as big as 70 cm weighing 10 kilos.

They can be used in recipes that normally require carp.

Sounds like good eating. Lots of folks are using goldfish to start up their system, so another fish from the carp family should work fine. Are tench raised in aquaculture setups in Germany, or are they just a native fish?

My English step-father told me that he used to fish for them all the time in the UK.....

They are native, but they are also farmed, but mostly in extensive fish farms in huge ponds together with carp and zander.

Yes they are nice fish to go hunting for with your fishing rod, can be quite a struggle if you get a big one on the hook.

Maybe they are livelier in Germany. The ones I have caught in Australia have been like "I think my hook is caught on something" then "Oh look, a tench!"

Habitat
Tench occupy the freshwater river systems of inland N.S.W., Vic., S.A. and Tas. They are widespread in Tas. but restricted and patchy in the Murray system occurring mainly in the mid to upper reaches of the more southerly rivers. Tench favor slow and sluggish waters.
Qualities
The tench is a tenacious fighter.
Best Bait

bait: Bread, Corn, Garden worm, Scrub worm
Other: Many and varied are the baits used to tempt tench, but to begin with it may be well to use bread, which can be cut to size with scissors, or a bread punch like those made by Drennan. Other baits to begin with include worms, small grubs, and blowfly maggots. Other choices include sweet corn kernels and pieces of boiled egg white.

Hints
Coarse angling methods provide best fishing results. Use of a bread based berley or basket feeder with bread works well. Tench are a very timid fish.
Light tackle is necessary with lines of 3 kg being around the upper limit for presenting baits to this species, which is very suspicious of any offering with strings attached. Free-lining, or fishing, slow-sinking, unweighted baits is a preferred method of tempting tench, but this approach is limited to waters where there is minimal movement in the water, such as a lake or pond with no current. In any event, the minimal amount of weight should be used that will counteract any current running and allow minimal tension between the angler and his presentation.
