I'm surprised that you can keep European Carp under any conditions. In my former home state of South Australia, it is an offence to allow them to live.

If you are sure you can keep them, talk to Asian and Southern European people about how to cook them. I used to know some Italian people who used to make fish cakes out of them. Watch the bones, there are thousand of them.

I share EB's view of Carp - they make good dog food.

I can understand YOU guys having a dislike of carp. I can assure you - the carp in the Murray River here is a different species to the ones in Europe. IMHO there are several species of carp - order carp in a restaurant (on the menu in Germany or Austria) its a different taste and few bones in it.
That's how I do the River Murray carp: Prepare 1 onion, 1 carrot (cut into small pieces) teaspoon of dill
put in a pressure cooker with 1 litre of water (add some salt if you like)
pressure cook for about 15 minutes.
Let cool, fish will come of bones easy. You can eat it youself ( or feed to dog or
cat  )

Funny thing is when we go fishing we always kill the carp and throw them up tha bank. And everyone says it tastes like mud. But I don't know anyone who has tried to eat one. I was only thinking that they might clear up uneaten food from the bottom of large fish tanks.

In Eastern Europe, carp is considered as a treat and replaces turkey on new year menus
people buy them some time before and let them swim some days in their bathtub (!) before preparing them to purge them
I once tasted smoked carp
it is delicious

+1 for the taste of swamp trout cooked the right way.

Not bad tucker and considering how many of them there is it seems worthwhile learning how to cook them.

Being a bottom feeder I think they would do a great job at keeping a tank clean.

Even if you just throw a couple of the same sex in so they don't breed.

Considering the size that they can grow (up to a metre long) a couple in a big tank would slurp up any excess food like giant aquatic hoovers.

There fun to catch to, fight like blazes on light line, all you need is sweet corn kernels as bait.

catfish are cannibals just like pike: given a chance, they will prey on each other and on other fish
the way to limit this is to over increase density and over feed

carp are not

I have a book somewhere about fish of southern australia, Ill see what it comes up with. They look like they are part of the tandanus family, so I would say their tolerances would be similar, but I'll check.

carp make up 60% of the total live weight of fish in the whole murray darling system. dont feed them kill them and help a native fish live.
just my two cents
