whatever volume you choose, a higher depth to surface area ratio will ALWAYS mean less evaporation :)

Minimum tank volume depends on the size of the fish ..... I guess 30 ml would do for one fry .
Minimum depth same , depends on size of fish ,, probaby 3 mm for fry.

I guess we are trying to ask you to be a LITTLE more specific.

ideally i'd suggest no smaller than 1000L, this gives reasonable temperature and chemical stability.

at 1000L you could support say 30KG (around 66lbs) of fish if you matched the growbed area to suit

I can raise about 30 tilapia up to eatin' size in my 150gal (570l) tank. The tank is 25 inches (635 mm) deep, but I usually run the water at 18 inches (460 mm) deep.
