might be a stab in the dark, but wouldnt also the aerated "return" water to the fish tank affect the amount of evap. as well?

By this I mean an aerated return exposed to atmopshere would result in a greater water loss compared to maybe something like EB's "silenced" return whereby the return water isnt as exposed to warmer ambient air temps before it enters the fish tank because it is covered

If you want to cover the fish tanks, shadecloth would be a good. It still lets air through, but will cut down the movement across the water's surface.

Covering the water on the tank will slow evaporation greatly, I remember seeing a Landline Show on Date grows in S.A. In their dams they had half filled cool drink bottles floating on th surface to stop Evaporation. However, doing this to our fish tanks may cause a lowering in the disolved oxygen levels. You may need to add some sort of aeration the water tank. I searched aeration and there is a thread on it.

The guy who runs my local hydroponic shop has a mature tomato plant with some amazing fruit on it and he's going through 40 litres of nutrient solution every three days.....on this single plant.

Water loss is inevitable in any aquaponic system but it will still be far less than in any conventional soil garden system. If you doubt what I say, check on the rates of water use for vegetable crops

I'd be careful about covering fish tanks too tightly......I'd rather have plenty of oxygen around the system even it means losing some water to evaporation.
