I have eaten carp a time or two and it is like most rough fish. The meat itself has a yellow to orangish coloring to it. If you remove the mudline which runs down the top center of the fish's back the rest of the meat is somewhat palatable. It is almost tasty when smoked.

It was introduced here in the US for vegetation control in ponds. It was a very big mistake. They are fun when you have one on the hook, however, fighting very aggressively with a pull that is comparable to a flathead catfish but they wear out a bit sooner. Favorite bait that I use on carp is sweet corn. As CRTD mentioned a lot of people here bowhunt carp in the shallows during spring when the reservoirs are at full capacity.

forgot to mention, I know of no one who will return a carp to the water alive. Most people who catch one that do not wish to eat it either give it to someone who will eat it or just leave it lie far from waters edge. They have very heavily armoured thick scales for a fish.
