Yes - filleted without gutting. Re: nice looking fish - they are actually a lot nicer looking when they are alive. FOr some reason a few minutes after they are killed they seem to go all splotchy - losing a lot of their colour,

BTW - I have been skinning the fish also once fillteted. The pics taken are of the skin side up. Because there is a thin fat deposit along the skin - the nife slides nicely against that. Also - when cooking without skin - the fat is more likely to disipate.

Oh? I thought that was something peculiar about the big 3.5 kilo Golden perch I ate (posted it somewhere)
They all slime heaps? I spent like 45 minutes trying to wash it before deciding it will dry up when baked ;-)
Honestly, there was enough to make Slimerhesitate!

I didn't notice the slime as such. Hmmm - they are slippery to handle and fillet - but so are many fish.

Nah the GP I had seriously oozed it, but (for the benefit of OB's dragon) probably only cos it was so big - much bigger than we would grow... ;-)
