Hi, I was thinking of adding spray bars onto the bell siphons that drain into the fish tank to add extra DO to the water (as well as a 12000L/h air pump). The spray bar would just be a short (30cm) length of PVC with holes drill in it. My main concern is causing issues with the siphon starting/breaking.

Would this work, or would it cause more issues than its worth?

Nup.... Leave the siphon, you'll just make life hard for yourself.

This would work perfectly fine. Just make sure it doesn't impede on the siphon flow rate.

Huh? No it won't... The spray bar will impede the flow and upset the start/stop of the siphon just as he suspected it might..

If you see a bell siphon in operation SPG, you'll realise that it creates a massive amount of aeration when dumping. In fact, if I had to put money on it, I would suggest that if you were actually able to get a siphon working reliably with a spray bar attached to the end of the return line, it would reduce the amount of aeration compared to the siphon just dumping normally.

Guess it depends on the size of the system then.
