Is it safe to use wood (untreated) poles pushed into the gravel in GBs as plant tressils/supports?

It should be, no reason why not if they are untreated (or branhces from your own trees - so you can be certain there is nothing in them).

Yes, but it will rot quite quickly compared use in a dirt garden. Bamboo lasts longer than jarrah. If you're using hydroton, even with a depth of 300mm there is not a lot of support for heavy plants, especially in a seabreeze, so you're better off, if you can, making an external trellis by securing posts outside the GB and then using string lines or similar to support the plants in the GB.

B also has some triangular "tomato trellis" systems which have been used to good effect in AP systems; I think Charlie has some pics on his system thread? They're going to be my next purchase. They sit on top of the media instead of being buried into the media.
