Post subject:  Black-Eyed Pea with Sausage and Collard Green Soup

Thought I'd help kick this new Recipe category off so here's a really good way to use greens (can be fresh instead of frozen and could be Kale, Collard Greens, or some other greens)

1/2 Lb Kielbasa (we usually use 97% fat free Kielbasa) or smoked sausage
1t Extra Virgin Olive Oil (EVOO)
1 Med Yellow Onion, chopped
1 1/2 Cups peeled, diced potato (Usually use 1 lg Russet for this)
15oz can black-eyed peas
5 oz frozen collard greens, turnip greens or spinach
14 oz Reduced sodium chicken broth
1 1/4 cup water
Salt or ground black pepper to taste

Instructions

Cut Sausage in half lengthwise then into 1/4 inch slices.
Heat oil, add sausage and cook, stirring often until lightly browned, 2-3 minutes. Add onion and saute until softened, 3-4 miinutes. Add potatoes, peas, greens, broth and water. Simmer covered over low heat until potatoes are tender, appox. 15 minutes. Season to taste.

Sorry Kurt, no photo. Pretty hot here now so don't see making soup as an option for the time being but once it cools off I'll try to remember to get a shot of this.
