Try this. You'll like it.

Pollo pibil. I use a slow cooker and it comes out great. I use this recipe http://allrecipes.com/Recipe/Cochinita-Pibil/ and substitute chicken for pork. In step 3 I use the slow cooker method - cook somewhere between 5 and 8 hours on low (till you can pull the meat apart easily with a pair of forks).

This isn't the original way of cooking this but it's the easy way. Normally this is wrapped in banana leaves and cooked in a pit (aka pib). You can line your slow cooker with washed banana leaves - it's great without and I usually don't mess with this but it does add some nuances that are great.

Serve over rice with tortillas.

I like a fried egg on a Caesar Salad.

Runny yoke to become part of the dressing. Let it cool a bit then hold it over your salad and attack it with scissors.
