Since posting in a thread by Imy, I've had several requests regarding pics of my home made hot smoker. The firebox (Lower left)started life as an oil tank for a hydraulic pump, The smoker section began as a 100 litre car LP Gas tank. The rest of it just evolved from stuff I had lying around! (I've got nearly as much stuff lying around as F&F Most of our US friends will be saying to themselves " So What's New". This is definately a cooking method that is old hat in the States, but only just emerging in Aus. Some of the flavours that can be imparted from rubs (Both wet and dry) and the use of different smoke woods, as well as different heating techniques ranging from gas through to charcoal, heat beads and even the smoke wood itself, when combined with the slow cooking times of "up to 18 hours", can produce a meal that is just not possible to get in the finest restaraunts of Australia. Show us your smokers, Give us your rub Recipes, Post your pic's Although at this stage I've only done hot smoking, I'm keen to hear about cold smoking as I am wanting to do Cheese at some time in the future Dicko

Scott, It's Well worth the effort! The end result is like a "casserole without the gravy" You can tell when baby back pork ribs are done when the bone slides out of the meat before carving! Oh.. did I mention the meat was tender? |

To do cheese try a electric fry pan in the fire box [no heat just turn it up enough to make smoke] |

D.L. Don't have pics of the inside handy, But I do have some! But Where? My problem is that my line of work, (Specialized welding) sends High frequency surges through my computers at a fairly common rate Tried uninteruptable power supplies, But the HF just picks up the ADSL line Outcome is a new computer every 6 months when it becomes unreliable So the kids get the old ones for homework and games! Now I just have to find which pc I had when I took the photo's |

Nice work Dicko, that one is as neat as any sold on comercial shelves. Does it have or are you planning on a Rotisserie? Is that one pipe and caps? If so it should last thru your grandchildren's lifetime! I've seen some made from old LP gas bottles. They need to be emptied gas free'd and filled with water before cutting on them. |
