Gday all. Thought i would share a fantastic pickled beetroot recipe i found. Here is the original http://www.bestrecipes.com.au/recipe/pickled-beetroot-L257.html.

Ingredients

4 Large Beetroot
3/4 Cup Water
1 1/2 Cups White Vinegar
3/4 Cup Sugar
1/2 Teaspoon Peppercorns
1 Bay Leaf
2 Cloves
1/2 Teaspoon Mustard Seeds
1/2 Cinnamon Stick
1/4 Teaspoon Salt


Instructions

Wash beetroot thoroughly and boil in water until tender.
Cool and remove skin. (Either by hand or with a knife.)
Cut beetroot into slices or julienne strips.
Place all other ingredients into a saucepan and bring to the boil.
Simmer for five minutes and then strain.
Pack beetroot into hot sterilized jars and top up with vinegar mixture.
Seal and store in a cool place.

I made this up with one of my gargantuan beetroot that i harvest about 6 weeks ago. Tastes fantastic and even got a non-beetroot eater to chow it down.

Made a batch yesterday using the recipe out of the latest Organic Gardener mag. It included two red onions and a kilo of granny smith apples and used apple cider vinegar. Was delicious with the zucchini fritters out of the same mag.
