Does anyone ferment food here? As opposed to canning or pickling, fermenting is the process of combining raw food smashed up with salt brine and letting the bacteria do its thing. Its super good for you with gut flora and general health. I made this batch this morning: Jalapeno's, Habenero's, Capsicums, Leeks, Onions, Eggplant, Garlic - herbs (parsley, oregano, thyme, perennial basil) |

Interesting stuff Jay... I have meant to do some, but been a bit slack.. Bought the "Permaculture Book of Ferment and Human Nutrition" a long time ago and read many bits of it, just never got around to doing much. |

Yeah my wife really preaches it Its easier than bottling and pickling with heat and pressure etc. All you do is squish it with some salt and its own juices. this is an interesting quote Quote: The proliferation of lactobacilli in fermented vegetables enhances their digestibility and increases vitamin levels. Interesting. Doesn't seem to be too much of a stretch from making kefir. Between that and veggies I'm just going to be soooo dang healthy I won't be able to stand myself... Or at least be a digesting machine. |
