bundy/bacardi, sugar and rosellas also makes an awesome little drink thats awesome over ice on a hot day.

steep the rosella calyx in your rum and sugar for a couple of weeks, strain, enjoy.. couldnt be easier.

I have just brewed my first batch of mead. Tastes pretty thou it has hardly aged at all (1.5 months). It has a nice golden colour and is 13%. I have plenty of honey so i should keep making it. The recipe i followed used bread yeast and i was surprised with the quality of it.

Sounds like you might have made a JAO. did it have an orange in it?
I brew mead also. I'd love to trade if you're local.
I'm in Melbourne. I have a 5 month old bottle in mind, it rarely lasts longer than this, no matter how much you make. Just ask Axl or Jaymie. ;-)
If you don't have anything to trade, we can always just drink some together ;-)

Im not sure what a JAO is im quite new to brewing i have only made a few things before and most havent worked... I live in the latrobe valley to tell you the truth i only have 3 bottles left, i keep sampling it to see if its ready yet... i need to make up another batch. If you want to do a trade i should be taking some honey from my hives soon if you dont already have a honey supply

What is rosella orcy? over here they are a native bird (like the one on the sauce bottle)

its essentially a wild hibiscus, and you eat the calyx from around the seedpod. normally seen for about $10 for 6 or 8 flowers in a little bottle of syrup on the counter at the bottleshop.

I have seen these sold at some supermarkets and bottlos in Bunbury and Australind. Very nice in a glass of champers also :D

I have 2 experiments on the go...
1 is just simply soaking a handful of chamomile in some nice white and see how it turns out in a few months.
2 is to make a chamomile tea of sorts and use the tea with a champagne yeast and sugars and brew it. It takes months for the final product and you dont really know you have something good for a few months in (chamomile can turn bitter)
Theres heaps of recipes out there to do it and can be done with most any herb and even veges! Pumpkin wine for example... :shock:
When I know what works for me ill post exact instructions.

Mead is next on my to do list I just need to find some cheap bulk honey.
There is a little herb farm in wangara that make medicinal meads and wines. She is a walking encyclopedia of all things herbal and recipes.

find a beekeeper Merrick, i know that sounds like a stupidly obvious suggestion but they usually have crystallized honey laying around which they will sell off really cheap... it wont make any difference to mead.
