reading through the posts and I got a craving for tilapia, luckily for me I have some filets in the freezer since I dont have my system set up yet.

heres a simple recipe I use for tilapia, I came up with it one day while trying to make "blackened" fish.

pour a few tablespoons of olive oil in a pan and heat it till it's smoking hot. meanwhile sprinkle the filets with some cajun type seasoning (spicy dry seasoning for those outside the US)
then I sprinkle a good amount of "old bay" seasoning over the filets.

very carefully slide the filets into the pan just be prepared for the splatter.
fry it for 2-3 mins on one side till it's nice and crusty, flip and repeat.
serve with salsa
