Not meaning to preserve, but some yabbies can be a bit mushy & bland
compared to prawn tail
I've found keeping the 'juice' from you're favourite pickled onions
throw yabby tails in & top up with vinegar or brined water
leave in fridge a day or two, & you might just want to hide some for
your efforts

I'm really not sure if they can be preserved with a shelf life

I think they can yabbynut, Cambinata Yabbies from the wheatbelt WA were at the Royal Show with us last year. I believe they bottle them and export to other countries.

Also meant cooked/peeled tails & claws
I'm also not sure if they'll 'cook' raw in vinegar
like roll mops ?
But I do know 4 hrs catching & about same time
cooking & peeling an esky full, doesn't fill a lot of jars...

My mate the GWH cooks them and then bottles them for 2 weeks, he has a wicked chilli and garlic recipe, Cambinata sell heaps of pickled yabbies, the price is unbelievable though, a very small 50gm jar is around $10-15, no they won't raw cook
