Here were some videos and pic instructions I found when I thought that filleting catfish should be easier than having to peal it first. Here are some of the links but I will re-post along with recipes when I find out the best place to put them.

Filleting without pealing first. These pics showing using electric kitchen knife but I expect would be possible with regular fillet knife too.

there are some videos there for all to see, some more on the DVD's

I can recommend the DVD's, the descaling tool and the filleting knife

well worth the investment

I get all my fish pre filleted and snap frozen in a slab of 50ish. :D :geek:
