If you catch it, smoke it and vacuum seal the fish pretty much straight away, how long will this keep in the fridge? Had a go at smoking some trout last week. Was sensational. I'd like to do some more to give to the family for Christmas. I'm not that thrilled with a strong smoke flavour so I made an equal mix of brown sugar, uncooked rice and jasmine tea leaves. I threw in some fresh marjoram too. I've done Redfin this way before in a big wok with a lid and it was definitely the best way to eat Redfin.
