Hello from sunny downtown Spur, Texas.

I own and operate a small take-out pizza place with a few RV spaces out back. It was at one time a video store and has morphed in to a pizza place. (anybody want to buy 7000 movies?) The plan is to dump the movies and turn it in to a pizza restaurant / Bistro. The aquaponics was my sisters idea. Her idea was to sell the produce and fish in the restaurant. It'll be a while because I am still remodeling.
I am still reading and trying to collect all the info I can.

Welcome. Just sell off the videos cheap to customers. The video/fast food place a block away decided to dump there DVD's and sold them in a day.

Well tomatoes for the sauce, bell peppers, jalapeños, onions (maybe), lettuce for salads, you get the idea. I plan for it to be a full service restaurant along with pizza. Hmmmm, Tilapia pizza might be a little too weird for most peoples taste maybe I could raise anchovies instead.

Sounds awesome. I recently thought about how to go about that for a different type of restaurant but am having trouble figuring out just how much space would be required for such a thing. A restaurant goes through a LOT of food in one year, but break it down into a week because isn't that about how long a ripe veggie stays on the vine? It'd be nice to hear the figures if anybody has actually come up with a number/sizes of ap required to feed one person all year long. Then multiply by hundreds of customers per day.

It'd be neat for the customers to see you pick veggies straight off the live vine for their meal. Organic and vegan places would have difficulty competing. 'Course you could always still supplement the produce delivery.

I have some friends that own a pizza/sub shop. I'll ask them how many veggies they go through in a week. I've seen the cases of tomatoes getting dropped of... my guess is you would need a very large system to support a resturant!

I've been told that disney world produces all of the restaurant food that they sell on the grounds. Wasn't told the acreage required though. In restaurant and home use, going vertical helps maximize space!

I don't think I could replace all of my produce purchases, but I have enough room to get fairly close. In my backyard I have enough room for 2 20x30 greenhouses and 2 1000 gal. tanks in an out building. At the store by removing 1 RV site I would have room for a 20x75 greenhouse with the tank inside. Another spot I have that I could get a 30x80 greenhouse with a building that could hold 3 1000 gal. tanks. Dang, I own too much property in Spur.
I could just replace the RV sites at the store with 5 more greenhouses. If I really wanted to get crazy I know where I can get a 1/2 city block (about 1 acre) for free or close to it.

But.... All of that sounds like a awful lot of work!

At Disney's Epcot at the Land exhibit they grow hydroponic produce for one of the restaurants in that building but not all the restaurants in that building, just the one and definitely not the whole park or all of Disney.
