Is the plan for me to have a 12 month fish Mal, the only one over here which is illegal for us technically is Red Fin, I believe plenty over NSW, we have them here but are meant to dispose of them if caught in rivers, well not release them back anyhow, I have a spot their are plenty so when organised will try them out, a mate from NSW tells me they are the best tasting freshwater fish, I have NFI about that, I don't think over there you will be able to buy them either, just need to know where they are and catch them, but again NFI on NSW rules

I believe it is illegal to have red-fin in NSW.
Also they don't taste very good ( my opinion) and have MILLIONS of small bones.
Yellow belly / Golden Perch can handle lower and higher temps than silver Perch , but some say they are difficult to keep them eating pellets. But if you can keep them on pellets ( one strain is better ) then they grow faster than Silvers.
Take a read .....>>>>>http://www.ausyfish.com/golden_perch_aquaculture.htm
And research here>>>http://www.ausyfish.com/golden_perch_research.htm

People told me the same about Trout Chappo, I discovered that the river ones don't taste as good as the stream or tank ones, must be all the crap in rivers

ok dont know where in NSW i can find redfin
but in ACT ( 3 hrs away ) they are in just about every body of water im told
im also told that they do taste good and the bigger they are the less bones they have
 no idea have about that bit as i havent eaten them personally either

trout always seems to have lots of small bones too but if it tastes good i will pick them out

when it warms up i guess i will be switching to silvers as i dont really have the time for fussy fish and slow grow out doesnt really worry me to much as then i dont have to buy fish twice a year and dont really have a big enough tank to grow them out to a great plate size either

I don't know how I came across it but this link http://www.youtube.com/watch?v=x5IZ2BOCBgA has a video on how to bone and eat a trout, works well on 300gm plus trout, had some smaller ones from coles that still were left with some small bones in, they were too fine to break the meat
