What do people reckon is the minimum size netting/wire that will keep the majority of pests away from their veges?

I have three sides of an opened garage to cover in an attempt to minimise pest intrusion (of the larger kind)

What kind of pests? Insects? Birds? Nosy Neighbors?

Good point Swanberg :)

The bug kind of pest :)

I'm leaning towards 6.5cm squared aviary wire netting. It wont keep all bugs out but my main aim is to keep those moths and butterflies away from the plants.

You want to make sure that the bees can still get in to pollinate.

Not that many plants would require bees, and we've got lots of native bees around. They can fit through just about anything :)
