I grew up with herbs hanging up all over the place My mum and dad used to dry oregano ,thyme and chillies We never froze soft herbs,as we always had parsley growing somewhere. and basil was just put in the tomato salsa for the flavour to permeate all year. I freeze ginger,galangal,coriander,chillies and garlic I also freeze lime juice. This gives me Asian flavours all year and allows me to keep up with the gluts. Micro planed frozen ginger is a great way to stop it going off in the crisper |
