Below a picture of some Apple Mint grown from one small shoot in about 8 weeks, already harvested just as much, decided time to pull it out, was grown in my Missus's Little System, 200lt bathtub with a 50lt sink as grow bed, 1200lph pump, one hour on one off 24/7, in tank, 15 mussels, 6 goldfish, 12 or so pygmy perch and a few striped minnows, I reckon it must of sucked about 15 litres of water a day, lots in a 200lt system

hehehehe I pulled my mint out for fears similar to your photos.
Mum said she wanted some though, so I put it in the 'Float chamber' of the horse trough that I use as a GB. since then it's got as big as yours, but of course has no gravel embedded in the roots. Deep water bed ;-)

Ah but kuda, those roots have probably reached into places you wouldn't suspect. Mint is sneaky that way.

I have mint growing in the top barrel over the flush tank in the barrel system, Not too long ago I noticed that the flow rate didn't seem t be right. The mint had sent shoots into the pump inlet to that top bed and stopped it up. They had pushed 12 inches down against the flow of the pump.

Mint should be segragated into it's own small beds and make sure to keep the drains and inlets accessible since you will need to clear them on occasion with mint in the picture.

Mint is handy though to take up excess nutrients and it can survive in most any conditions though it often dies back a bit in the heat of the summer here.

Well mine died back a bit when we got that disasterous heat wave.
But I know, I pull it out regularly to portion off sections. I usually find there are some roots in the gravel again, but they get broken off.

I just pulled the mint from my 24 inch / 60.96 centimeter deep beds and found tiny mint roots through the bed; all the way to the drain.

There are blackberries you can get that are thornless. I'm also told these propagate much more difficultly, perhaps are even infertile. I might suggest you use these.
As for suitability to AP, I have a boysenberry, going NUTS in my system atm, so go for it, it'll be fine.
If you train it, it'll be easy to harvest too.
