You could probably grow basil and just prune it back, same with mint (just be careful it doesn't take over the bed). Either of these could get too tall so it's up to you to keep them in bounds and away from the light. Basil Mint Baby Bok Choi Baby greens or some other types of lettuce. I would think leaf lettuce where you trim them and let them regrow would work if the temperature is low enough that they don't want to bolt. Some varieties of Beets might work. That will get you started but I'm sure there are more. |

water cress would be OK as well if you fancy that - but needs to be kept under control like mint. |

Baby spinach, just keep cutting it back. Strawberries if you're not running salt. |
